O tradicional bacalhau, as couves, o bolo rei do sítio do costume. As rabanadas.

{Scroll down for English version}
É preciso estar sempre a fazer bolachas!
Receita adaptada daqui
Ingredientes (cerca de 20 bolachas)- 1/2 chávena de óleo de coco
- 2 ovos
- 3/4 chávena de açúcar mascavado
- 3/4 chávena de farinha de espelta, integral
- 1/2 chávena de farinha de trigo, integral
- 1/2 chávena de farinha de trigo normal
- 1/2 chávena de pepitas de chocolate
- 1/2 chávena de pepitas de caramelo
- 1 colher de chá de fermento em pó
- 1/4 colher de chá de bicarbonato de sódio
Como fazer:
- Pré aquecer o forno a 180˚C.
Bom apetite!

Mystery solved! The cookie monster lives here. It's not a bad thing. He is very nice and as long as the cookie box is full, there is nothing to worry about. I have some work, though. I have to bake cookies all the time! The good thing is that I'm always trying to make a new recipe, as healthier as possible, but also yummi. This one is very good. We use coconut oil, and not butter. Coconut oil has saturated fat, but appears not to raise the risk of cardiovascular disease, as it happens with the saturated fats in butter. Besides, it has such a nice flavour.
Recipe adapted from here
Ingredients (about 20 cookies)
- 1/2 cup coconut oil
- 2 eggs
- 3/4 cup brown sugar
- 3/4 cup whole spelt flour
- 1/2 cup whole wheat flour
- 1/2 cup all purpose flour
- 1/2 cup chocolate chips
- 1/2 cup butterscotch chips
- 1 tsp baking powder
- 1/4 tsp baking soda
How to prepare:
- Preheat the oven to 180˚C.
- In a large bowl beat together coconut oil, eggs, and brown sugar until very fluffy.
- Add remaining ingredients, mixing together until all are incorporated.
- Roll balls (I made them with a tbsp as measure) and place them on a cooking sheet. Bake for 10 minutes. Remove and let them cool for a while (be careful, you might have a cookie monster at home too...)

Receita adaptada do livro Tea at Fortnum & Mason
Ingredientes (12 madalenas):
Here at home we all have a special fondness for very simple cakes. No icing, no filling. There is one in particular that is on the top of the list. Madeleines.
- Pré aquecer o forno a 190˚C.
- Numa taça à parte, misturar a farinha e o fermento.
- Noutra taça misturar a manteiga e o óleo.
- Deixar arrefecer numa rede.
Bom apetite!

Here at home we all have a special fondness for very simple cakes. No icing, no filling. There is one in particular that is on the top of the list. Madeleines.
There is a special recipe (which I cannot bake) that we eat with our eyes closed, so we are not distracted by anything else. They are baked in a firewood oven, in the city where my parents live. When we go for a visit we always have a batch of madeleines to sweeten up the moment. And a cup of tea, to dip the madeleine in.
These ones were baked thinking of my mother ♡ (whose birthday is today), and of this special tea party. They are not as the ones we eat at my parents table. But they were gone in a blink of an eye, and I think that tells everything.
Recipe adapted from the book Tea at Fortnum & Mason
Ingredients (makes 12):
- 40g unsalted butter, melted and cooled, plus extra for grease
- 40g vegetable oil
- 80g self-raising flour, sifted, plus extra to dust
- 60g brown sugar
- 2 medium eggs
- 1/2 tsp baking powder
- zest of 1 lemon
How to prepare:

- Grease a 12 mould madeleine tin and dust it with flour.
- Whisk together the sugar and eggs in a bowl until thick and creamy.
- In a separate bowl, combine the flour and the baking powder.
- In another bowl, combine the butter and the vegetable oil.
- Add half of the butter and oil with half of the flour mixture to the sugar and eggs. Fold in.
- Add the remaining mixtures and the lemon zest to the eggs mixture and fold in carefully.

Shortbread de limão, gengibre e sementes de papoila • Lemon, ginger and poppy seeds shortbread
segunda-feira, abril 15, 2013
{Scroll down for English version}

4. Aquecer o forno a 160° C.

One of the advantages of being part of this challenge is that, at least once in a month there are always new cookies around. Shortbread is one of my favourite biscuits (loads of butter, I know...) and they're so good with a glass of milk (rice milk, in the photo). Following a quick search for shortbread recipes, mixing one idea from here and another from there, here it is this aromatic biscuit.
You can do the recipe as it is (and freeze half of the dough, as I did) or you can do just half of it. Manuela, Hope you like it :)
Ingredients (about 80 cookies):
- 3 cups all purpose flour
- 1/4 cup semolina
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 tablespoons poppy seeds
- 200g unsalted butter, room temperature
- 1 cup sugar
- 2 tablespoons lemon zest
- 1 tablespoon fresh ginger, grated
- 1 egg
- 3 tablespoons lemon juice
- milk, for brushing
1. Sift together flour, baking powder and salt. Stir in semolina and poppy seeds.
2. Cream butter, sugar, zest and ginger until fluffy. Stir in egg and lemon juice. Add dry ingredients and blend until dough comes together.
3. Divide dough in 4 and shape into logs. Wrap and chill for at least 2 hours (or freeze).
4. Preheat oven to 160° C .
5. Unwrap dough and slice into thin wafers and place on a parchment-lined baking sheet. Brush cookies with milk sprinkle some poppy seeds and bake for 12 minutes, just until edges turn golden.

Muffins de cenoura perfeitos! • Perfect carrot muffins!
- Acrescentar a cenoura e misturar.
Bom apetite!

It might seem that I'm overreacting, but I'm not :) These are really delicious. And just "happened"... I was going to bake these muffins, but I didn't have any apples (bad stock management...). So I thought that grated carrot could also work well (by the way, I just love carrot cake! If you have any delicious recipe, please share!). And, for me, carrot cake always comes with chocolate sauce :)
Ingredients: (12 muffins)
- 150ml vegetable oil
- 150g dark brown sugar
- 3 eggs
- 100g grated carrot
- 2 tsp cinnamon powder
- 100g wholemeal flour
- 100g self raising flour
- 1 tsp baking soda
- 1/2 cup chocolate chips
- 1/4 cup rice milk
How to prepare:
- Put the eggs with the sugar and the oil in a bowl and mix well.
- Add the carrot and mix.
- In another bowl, mix the dry ingredients and then add to the wet ingredients. Combine gently. Don't mix too much, or you'll end up with very tough muffins.
- Fill 3/4 of each muffin case, previously lined with a paper case. Put in the oven for 25 minutes at 180ºC.
- For the chocolate sauce, warm up the milk and remove from the stove. Add the chocolate chips and let them melt (1 or 2 minutes). Mix well.
- When the muffins are cool, dip each in the chocolate sauce.
- Aquecer o forno a 170ºC.
Bom apetite!

Spring is here... sunny days, walking and playing in the park... sweet treats :) These go along with every season, right?
But these nests were baked specially for Spring and for this challenge. They are as healthy as they can be, believe me. The recipe is the same I baked here. Instead of using jam to fill each cookie, I baked them without filling and after being cooled I filled them with hazelnut spread. Delicious...
Ingredients (about 30 cookies):
- 1 cup all purpose flour
- 1/2 cup spelt flour
- 1/2 cup ground almonds
- 1/2 cup maple syrup
- 1/2 cup canola oil
- 1/4 tsp salt
- 1/4 tsp hazelnut spread for each cookie
How to prepare:
- Preheat the oven to 170ºC.
- Place all the ingredients, except the hazelnut spread, in a large bowl and beat until well combined.
- Line a baking sheet with baking parchment and drop spoonfuls of dough (I did it with 1/2 tbsp as measure), 1 inch apart. Press the center of each cookie with your thumb (at half time of the baking process I repeated this with a spoon).
- Bake until the edges are lightly browned, 10 to 15 minutes. Let them cool completely and fill with the hazelnut spread and sprinkle with roughly chopped hazelnuts.
Enjoy!

The recipe is in Gwyneth Paltrow's book My father's Daughter, and I did it just like she says, because this girl also enjoys healthy food :)
Please, feel free to download here and print this small treat I made for you :) Thank you for being on that side! For visiting the blog, for the comments (they're so uplifting!), for the likes on the new facebook page...
And thank you to my number 1 follower, for believing...
Ingredients:
- 2 cups of white spelt flour
- 1 cup of cocoa powder
- 1 1/2 tbsp baking powder
- Pinch of salt
- 1/2 cup of vegetable oil
- 1 cup of maple syrup
- 1/2 cup of rice syrup or agave nectar
- 1/2 cup of strong brewed coffee
- 1/2 cup of soy milk
- 1 cup of chocolate chips
How to prepare it:
- Sift the flour, cocoa, baking powder, and salt together in a large mixing bowl.
- In a separate bowl, whisk together the vegetable oil, syrups, coffee and soy milk. Mix the wet ingredients into the dry ingredients, being careful not to overbeat (or you end up with tough cake).
- Pour half the batter into a greased baking dish and sprinkle with half of the chocolate chips. Pour the rest of the batter and sprinkle with the rest of the chocolate chips.
- Bake for about 30 minutes, in a preheated oven to 180°C.
- Let it cool for a while, before cutting into squares, if you manage to wait :)
Enjoy!
